03 — The difference that matters

Powder and extract are not the same input


This is the one line in the table worth pausing on, and it comes from the published ingredient lists rather than from anybody’s marketing. A dried fruit powder is the tomato, dried. A standardised extract is concentrated to a declared amount of the compound you are buying. Both can be described as tomato on a label; the concentrations are not comparable, and only one of them lets you know what you are taking.
